I don’t know about you but I love Sunday mornings. Wonderful soul music is playing in our apartment and the sweet smell of delicious pancakes is lingering in the air.
I have been searching for a pancake recipe with no sugar, milk and flour for a while now and finally found an amazing one!!!! These pancakes are heaven…. so don’t try them… you might get addicted.
Oh, and by the way, they are super easy to prepare!
3 (medium size) ripe bananas
4 eggs
35 g desiccated coconut
1/2 tsp ground cinnamon
2 tbsp coconut oil
125 g fresh blueberries
maple syrup or rice syrup optional
Mash the bananas and half of the blueberries with a fork. Place in a bowl and whisk together with the eggs and coconut.
Heat the oil in a pan (make sure that the oil is not getting too hot) and add three tablespoons of batter for each pancake. Fry them until golden on each side.
Stack the pancakes and top them with blueberries, coconut and maple syrup – just as you like them.
