Before I came to Melbourne, I’ve never had a banana bread. It’s not really a big thing in Austria. But here you find this deliciousness everywhere. It’s so simple, super quick to prepare (people refer to it as ‘Quick Bread’ – well, that’s true) and a nice and healthy alternative to other sweet pastries and breads.
So I tried a couple of recipes. And that’s my favorite. Simple, no sugar added and you have still space to be creative.
Oh and did you know that the banana bread has it’s own day? Weird, but cute! Celebration is on the 26th February 2016.
INGREDIENTS
3 ripe bananas (the riper the better 🙂 )
3 eggs
100 g oats
100 g flour of your choice or almond meal (I used whole wheat flour)
2 tsp baking powder
pinch of salt
coconut oil (or butter) to grease the pan
You can add a handful of walnuts and dark chocolate chunks (like I did in this recipe) and/or ½ tsp cinnamon;
or even blueberries… just be creative and try new styles!
PREPARATION
Preheat the oven to 175°C.
Smash the bananas in a bowl, add all the other ingredients and stir well with your hands. Pour the mixture into a greased loaf pan or muffin pan and bake for 40 – 50 minutes.
Let it cool down and enjoy!
